Ingredients
- 16 oz lean ground beef
- 16 oz ground pork
- 1 Tbsp olive oil
- 2 Tbsp olive oil
- 2 cups 1/4-inch diced carrots
- 2 cups diced onion
- 1 1/2 cup diced celery
- 8 cloves garlic , minced (3Tbsp)
- 10 (14.5 oz) cans chicken broth bring to a boil add:
- 2 cups dry orzo pasta
- 12 oz fresh spinach , chopped
Instructions
- Fry beef and pork together in a soup kettle with 1 Tbsp. olive oil.
- When meat is half done, add: 2 Tbsp olive oil, carrots, onion, celery and minced garlic.
- Saute until meat is done then add chicken broth and bring to boil.
- Add Orzo and boil until al dente.
- Add spinach.
- Just before serving top each serving with shredded Parmesan and serve with fresh warm bread slathered with butter. Yummers!
