FOURB SPINACH AND TORTELLINI SOUP

Ingredients

• 1 lb sweet Italian Sausage
• 1/2 large sweet onion chopped
• 6 large garlic cloves, minced
• 2 cans (14-1/2 ounces) diced tomatoes, undrained
• 4 cans (14-1/2 ounces each) beef broth
• 1 qt can of Vegetable juice
• 2 tbsp Italian seasoning
• 2 pkgs (9 ounces) refrigerated cheese tortellini
• 8 cups fresh baby spinach I use double this
• Salt and pepper to taste
• Shredded Parmesan cheese if desired

Instructions

1. In a large soup kettle, chop and cook sausage with onion and garlic; cook and stir until sausage is done.
2. Stir in tomatoes, broth, vegetable juice and Italian seasoning; bring to a boil.
3. Add tortellini; bring to a gentle boil. Cook, uncovered, just until tortellini are tender, 7-9 minutes.
4. Stir in spinach. Sprinkle servings with cheese if desired.
