Ingredients
- 1 lb sweet Italian Sausage
- 1/2 large sweet onion chopped
- 6 large garlic cloves, minced
- 2 cans (14-1/2 ounces) diced tomatoes, undrained
- 4 cans (14-1/2 ounces each) beef broth
- 1 qt can of Vegetable juice
- 2 tbsp Italian seasoning
- 2 pkgs (9 ounces) refrigerated cheese tortellini
- 8 cups fresh baby spinach I use double this
- Salt and pepper to taste
- Shredded Parmesan cheese if desired
Instructions
- In a large soup kettle, chop and cook sausage with onion and garlic; cook and stir until sausage is done.
- Stir in tomatoes, broth, vegetable juice and Italian seasoning; bring to a boil.
- Add tortellini; bring to a gentle boil. Cook, uncovered, just until tortellini are tender, 7-9 minutes.
- Stir in spinach. Sprinkle servings with cheese if desired.
