I just love this salad. Simple and amazing!
Ingredients:
1-16oz pkg Orzo pasta- cooked
1 small red bell pepper- chopped
1 small yellow bell pepper- chopped
1 bunch green onions- chopped
1 small red onion- chopped
1-15 oz can chick peas- drained and rinsed
1-15oz can kidney beans- drained and rinsed
1-15 oz can black beans- drained and rinsed
1-15 oz can whole kernel corn- drained and rinsed
1-cup cilantro leaves- chopped
Salt and pepper to taste
Juice of 5 limes
6 Tbsp EVOO
Directions:
Toss all ingredients together and refrigerate 2 hours then serve.
