Ingredients
- 1lb ground beef
- 1c chopped onion
- 1c shredded carrots
- 1c chopped celery
- 1 1/2 tsp dried basil
- 1 1/2 tsp dried parsley
- 8 tbsp (1 stick) butter
- 12 c chicken broth
- 8 c cubed potatoes
- 1/2 c all-purpose flour
- 4 c cubed sharp Cheddar cheese
- 3 cups milk
- 1/2 cup sour cream
- Salt and pepper to taste
Instructions
- In a large soup kettle, cook and stir vegetables and beef until beef is brown.
- Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 15 minutes.
- Add butter and milk, stir in flour gradually until smooth, stirring constantly.
- Bring to a boil and reduce heat to simmer. Stir in cheese.
- When cheese is melted, add sour cream and heat through. Do not boil.
- Add salt and pepper if need to taste. May add bacon crumbles if wanted.
