Having Cream puffs on New Year’s was a tradition in the Bedner family when they were growing up. Not just any old cream puff. All homemade with real cream from the bulk tank whipped to perfection by their Mom. I may not make them on New Year’s day but I still make them around then. They are better than ANY other cream puff!
Heat to a rolling boil- 1 c water and 1/2 c butter.
Remove from heat and stir in 1 cup flour all at once. Cool and beat in 4 eggs -one egg at a time. Drop on parchment line or greased baking sheet 1 Tbsp at a time.
Bake 350 until golden.
When cool, sprinkle with powdered sugar and fill with your favorite filling.
