LETICIA’S GREEN POSOLE

This recipe is true Mexican Pasole passed on to me by a wonderful Mexican family. This is meant to celebrate and bring good luck in the new year. It is like a chunky American soup. This recipe makes a big kettle and you can make more or less depending on how much you put into it! We generally have it with friends on New Year’s Eve. What better way to ring in the New Year!

Ingredients:

1/4 head of iceberg lettuce
1 white onion, peeled and cut in fourths
6-8 large peeled cloves of garlic
1 bunch of green morron cilantro
10 large tomatillos, peeled
1 can green chiles
Salt to taste
5 cubes Knorr chicken boullion
Pork
Chicken
1 gallon sized can hominy

Directions:

Put chicken, pork, salt, garlic, onion and Knorr chicken bouillon into a large kettle and cover with water. Bring to boil and then simmer until the meat is cooked. Shred or cut up meat and put back into broth.

Place lettuce, cilantro, tomatillos, chilis and salt into another kettle and add water to cover vegetables. Simmer until soft and then drain. Liquify vegetable mixture using an immersion (or other) blender.

Add liquified vegetable mixture back to meat.  Mix it all together. Add washed hominy. Simmer until ready to eat.

Serve with: sliced radishes, fresh chopped onion, cheese, sour cream, avocados etc…
